During his years in western Switzerland, cheese maker Walter Grob got to know and love Tomme. The customers of the Engelberg cheese dairy liked the monastery bell and the brie – so the idea of a local Tomme with a mild, creamy taste was not far off. During his holidays in Austria, Walter Grob discovered a black cheese with white mould. The Austrians told the Swiss that the colour came from refining with red wine. While tinkering with the red wine “Engel Wy”, Grob finally discovered the whole truth: ashes give the mild and very creamy Tomme its black colour. In 2018 the Engel Wy Tomme was awarded the Swiss Cheese Award for the best innovation.

Le Cavalier

A mild semi-hard cheese from a farmer who foregoes the use of mechanisation and only works with horses – obviously Freiberger horses from the region.
They are compact and deep-chested in equestrian terms, with a short, stable back and strong neck. Freibergers are the last original Swiss horse race to come from the Franches Montagnes (Freiberger in German) hills in the Jura. Oursupplier uses these horses to cultivate his fields. His cows seem to appreciate the gently cultivated pastures because the milk he delivers for Le Cavalier is of extraordinary quality.Le Cavalier (the Rider, in English) is a mild, semi-hard cheese, matured for three to four months. Le Galait

Galait is our first O’Lait creation!

The shape of this small cheese (160g), reminiscent of a pebble, helped give it its name. Ripened in a humid cellar for 2 weeks, Galait is turned and brushed daily until it has a slightly brownish rind. Galait is characterized not only by its shape, but also by its creamy texture and fresh milk flavors. A real fondant…O’lait.

Le Niola de Chasseral

Niola is the name given to the people of Nods.

The cheese goes well with the locals. These have a strong shell but a soft core. Supple paste. Ivory in colour, changing according to the feeding of the cows. Aromatic Characterful flavour, slightly freshly acidic. Depending on age, the cheese can become very soft to “runny”.

Le Sauvage

1876, farmers founded the Käsereigenossenschaft Courtelary. Until 1984, the cheese factory produced mostly Gruyère. The modern cheese factory was created 1966, instead of the Restaurant Le Sauvage, which burned down in 1962.
