Rustic Alpstein Klosterkäse is made according to an original recipe dating back to the 12th century.
This was a time when the people of Gais were already producing cheese for the monastery in St. Gallen. Quotes from documents (Zellweger) prove that the wheels were not only used as gifts, but also as a means of payment. With its milky, buttery and aromatic character, it is popular with young and old alike. Past and present are thus combined in a delightful way.
