Gallus Grand Cru
Gallus Grand Cru is named after Saint Gallus, the founder of St. Gallen Abbey. The archives of the abbey’s world-famous library reveal that as early as 1565, monks were producing cheese according to strict guidelines and purity requirements.
This tradition is continued by Gallus Grand Cru. The cheese is made in a small Toggenburg cheese dairy according to an old recipe using fresh hay milk.
