Le Niola de Chasseral

Niola is the name of Nods’ inhabitants.

This cheese suits the natives. Hard shell, soft core. Smooth dough. The colour of ivory, variable depending on the feeding of the cows. Aromatically full of character, slightly sour. Depending on its age, this cheese can become very soft, or even “runny”.
