Le Sauvage

1876, farmers founded the Käsereigenossenschaft Courtelary. Until 1984, the cheese factory produced mostly Gruyère. The modern cheese factory was created 1966, instead of the Restaurant Le Sauvage, which burned down in 1962. So, we produce wild, rustic cheese following the hard cheese past and the restaurant, as well as its old times.
