Rustico Nostrano
One of the specialities of the Berg-Käserei Gais cheese dairy is Rustico Nostrano. This grey mould cheese matures for around three months in the dairy’s own clay vaulted cellar, which has space for around 2,400 wheels.
The natural climate promotes mold growth, giving the cheese its special character and slightly earthy, pure flavor. Three times a week, the wheels are turned by hand and lovingly cared for until they are finally packaged and leave our premises to find their way to quality-conscious customers.

Type: Swiss semi-hard cheese / semi-hard cheese, thermised Raw material: Mountain milk from Appenzellerland.
Shape: round, 30 cm diameter – Weight: approx. 5.2-5.6 kg
Rind: naturally ripened, closed grain, white – grey mottled desired, noble mould ripening
Perforation: abundant, lively round perforation (pea size)
Maturity: 2-3 months – Shelf life: 1 month, cold chain
Usage: Interesting change as a semi-hard cheese, on cheese platters and goes ideally with a glass of Merlot
