Toggenburger Bio Bergkäse

Creamy, spicy to tart has a full-bodied aroma. In summer, the lush alpine pastures with their herbs and grasses give the milk a unique and traditional taste. The raw milk cheese is produced in the Stofel cheese dairy in a copper vat according to old traditions and traditional knowledge. The master cheesemakers process the fresh raw milk with great sensitivity into this fine mountain cheese, which delights every cheese lover with its typical, spicy aroma. The loaves mature in the cellar for several months. During this ripening period, the small holes and occasional gläss form. Each individual cheese is cared for daily, i.e. rubbed with salt water. This creates a smear layer that accelerates the ripening process and gives the mountain cheese its typical aroma.
