For the production of this cheese we are using 100% regionally produced goat’s milk from farms without silo feeding. The milk is processed with great craftsmanship into this unique goat speciality. During the ripening period the cheese is turned regularly and rubbed with wine yeast. This gives it a unique light yeast flavour, which is rounded off with a pleasant mild goat aroma.
