Schwarzes Schaf
The Schwarzes Schaf (Black Sheep) is a semi-hard sheep’s cheese. This delicacy is made exclusively from natural ingredients, namely silo-free milk from the Toggenburg region, rennet, cheese cultures, salt and wine yeast. It is creamy with a pale yellow dough and variable perforation. Until it reaches its racy, spicy aroma, it is affinated in our cellar for about 3-4 months with a wine yeast from the region.
